Vegan Taco Salad With Cashew Sour Cream (AKA BEST TACO SALAD EVER!)

This taco salad is so creamy and so delicious, it’s hard to believe it’s vegan and extremely good for you.  Your looking at slimming fiber, detoxifying essential, and major beauty oils. This recipe takes next to no time to prep and will leave you with an extremely satisfied belly.

 

Vegan Taco Salad With Cashew Sour Cream 

Prep time: 15 -20 min

Serves:  4

Walnut Taco Meat

2 cup  walnuts
1 packed cup sun-dried tomatoes soaked in oil.
1 tsp cumin
1/2 tsp garlic powder
1/4 – 1/2 tsp salt
1/2 tsp chili powder
pinch cayenne pepper

Toss into food processor and blend until blend becomes like meat texture.

Cashew Sour Cream 

1 cup cashews, soaked 30 – 45 min (optional)
1 lemon juiced
¼ tsp salt
⅓ cup  water
⅔ cup  ice

Toss into food processor until smooth like sour cream. (might need to transfer into blender to get the silky smooth finish)

Mix salad ingredients with taco meat and cashew sour cream for the best taco salad ever! 

1/4 -1/2 cup cilantro
2 cups romaine
2 cups arugula
1 avocado
1 tomato
1/4 cup 2 red onion chopped
1 tbsp green onions sliced

***Add some corn and black beans for even more nutrition and extra flavor 😉
