Super greens like swiss chard, kale and collards are becoming a more popular item on today’s grocery list for their super anti-aging and cleansing properties. As popular as they are I get a lot of clients and friends telling me how they feel stuck with them the minute they unload them from the grocery bag. Here are 8 ways to prep your super greens and a super quick, simple, flexible, and seriously delicious recipe.
QUICK, DELICIOUS & LOADED WITH NUTRITION.
> 4 swiss chard leaves (chopped )
> 2 tomatoes (diced)
> 1/2 cucumber (sliced into 4 pieces)
> 1/2 medium red onion (diced)
> goats feta
> pumpkin seeds or almond slivers
> salt & pepper to taste
> basil leaves for extra flavor
Step 1) Sautée swiss chard and tomatoes with water NOT OIL on med to low heat. Add salt & pepper and cook for approximately 5-7 min or until lightly cooked.
Step2 2) Transfer swiss chard and tomatoes onto plate and mix in cucumber, red onions & goats fetas.
Step 3) Sprinkle on some pumpkin seeds or slivered almonds and garnish with basil.
